As most thermisters are 100k at room temp I would measure your thermister at room temp
Below is my 100K Thermister Chart.

At room temperature the resistance of my thermister is R25?C=100KΩ?1%
At 216C my thermister is R216?C=464.5Ω?1%
Lookup the chart for your thermister and measure the resistance at room temperature an compare to the Lookup table.
I too have had what I believed was a good thermister dissembled the hot-end only to find the same happen to me.
Replaced the thermister problem solved.

Ok I'm not exactly the smartest when it comes to wiring, so I have no clue what any of that means but how could the thermister just all the sudden stop working properly?
