converting to different filament diameter
Hi, I'm curious about what I would need to do to convert a printer from using 1.75mm filament to 2.85mm? Is it simply switching the hotend? how much work would this be?

If your stepper motor is not powerful enough... It will miss steps.

Without addressing whether you should or not, as a minimum, you'd of course have to change the diameter parameter in your slicer too. What do you have for an extruder? If it is direct drive without gearing, you're pretty much stuck to 1.75mm filament. 3mm takes more effort to extrude, and gearing is required to obtain it from the typical stepper motor. If your extruder has gearing, you'd still have to make sure the filament path through the extruder can handle the increased diameter. It very well might, but it would be something to check.
