While we all love the idea of 3D printing food, it’s definitely an area that will still require more maturity in the technology before it becomes a reality for the hospitality industry. Researchers from both Cornell and Columbia Universities recently 3D printed an entire table service as they worked to show how the technology has great potential in food service. They 3D printed wine glasses and placemats, and had an ornate bowl made through a service bureau as well. Making items food safe was a priority, for which they used a silicone coating. In conclusion it was stated that the coating was not good for the long-term however, and a permanent, FDA approved solution would need to be used in the future.
