Generally, yes. We took out Makerbot Replicator 2 and made the Z Axis 50% higher by changing the rods and case and it works fine. Practically any RepRap can be changed in size pretty easily....

My son just built a Wilson 2, I think it prints 200 by 300. It is like a Prusa i3 in Steroids (we have three i3s), build is very beefy and prints very well.
