Unhappy Ender 5 Pro - Newbie Problem

Just purchased an Ender 5 Pro to help work on a cockpit project. I have it setup but when printing the test pig, it keeps giving me issues. The half built pig (right) when it went off the rails and just started building the straight line back and forth on the pig's side. I've tried to restart and now it is doing the same-ish thing but much earlier (left). I'm a day into this and don't really even have the vocabulary to describer this. I've leveled the bed 10 times and don't think that is it. Any ideas on where to start would be much appreciated!

This post gives an interesting perspective to the expression "when pigs fly."

Can you see a point in the process where the filament isn't bonding well to the previous layer? Are you using ABS or PLA? Do you have the part cooling fan starting after the first layer is in place?
