Creality Ender 3 Pro / Cura problems

I bought the Creality Ender 3 Pro as my first 3d printer about a week ago. It has made a few very nice prints for me using Ultimaker Cura 4.4 Not sure if my bed is warped or what, but the last 2 days, I have had nothing but problems, such as warping, prints not sticking to bed and consistency issues causing my prints to mess up in mid print. I'm so confused because I have tried everything that I know to do (from reading online) and nothing is working. But the most curious part of this equation is that when I print the "dog" file that came with the printer on a micro SD card, it still works perfectly. I attached some pics of the issues I've been having in hopes that someone may see it and advise me where to go from here. Any help would be greatly appreciated.

Above is the warping issue. Above is the bed adhesion issue.

And above is the Raft for the "dog" file i referred to. I literally had to pry this up using a scraper, so no issues with adhesion there.

Having the eccentric nuts adjusted correctly is a must an your first goal.
Having the Slicer configured for the Ender 3 is the 2nd goal.
I would set a third goal of Setting up a few Profiles for different layer heights.
